My oh my, the sweet joy of fresh strawberries is like no other. We decided to whip up a batch of homemade strawberry jam - with a little extra boost from Pennington's Strawberry Jam of course. The alcohol cooks out, but the flavor remains, making this jam the best homemade strawberry jam we've ever tasted!
6+ cups fresh strawberries, hulled
juice of two lemons
1 ½ cups Pennington’s Strawberry Rye Whiskey, divided
1 envelope pectin
4 cups sugar
With a potato masher, crush strawberries into smaller pieces before placing in a large saucepan. Add lemon juice, pectin and one cup of Pennington’s Strawberry Rye Whiskey. Bring to a rolling boil before adding all four cups of sugar at once and stirring to combine. Bring back to a simmer, skim any foam from the top and remove from heat. Add remaining ½ cup of Pennington’s Strawberry Rye Whiskey while still piping hot. Stir to combine and fill clean jars. Will keep refrigerated for months or can be canned for longer pantry storage
